Erybgium (Jarjabina) Flower honey

The name Erybgium is ancient and is mentioned in the Mishnah. The Erybgium honey of Poral Apiary is produced from flowers growing in areas adjacent to Lahav Reserve in the northern Negev.
At early winter, a soft leaf rosette fit for human consumption is developed, and in the spring, a flowering stem grows with small and thorny leaves. At this stage, the plant’s color is changed to violet-blue and remains that way throughout the summer. The flowers are tiny, bisexual, blue to violet, and are abundant in nectar.
